The best flavours of the Ligurian Riviera
Hello everyone, today we’re gonna talk FOOD! In particular, the best fìand most typical dishes and preparations from La Spezia and surroundinga.
#1 it’s a must: pesto, it never gets old, it never gets boring, a thousand recipes with it, but still pasta, pesto, potatoes and green beans it’s an all-time favourite of ours!
#2 is ‘focaccia’, which is a typical kind of bread, oily and DELICIOUS! Goes perfect with pesto on top of it!
#3 are ‘panigacci’ & ‘testaroli’. Ancient recipe and way of cooking them: it’s the same dough, to make panigacci you cook that dough between two ‘testi’ (two caramic plates) heated on the fire. To make testaroli you cook in boiling water the panigacci, super easy, super yummy!
#4 it’s fried anchovies: the best ones are caught in Monterosso, and fried fresh soon afterwards – so tasty.
#5 it’s farinata: made with just chickpea flour, water, and extre virgin olive oil, it’s a simple and yet delicious dish! We love it!
# are ‘sgabei’: a typical fried bread, soft and yet crunchy, best eaten with ham, salami, stracchino or other cold cuts and cheese.
